Carrot Cake Whoopie Cookies


Whisk Together:

  • 2 - 1/4 Cups (350gms) flour
  • 2 Teaspoons Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 1 teaspoons baking soda
  • 1 teaspoon salt

Beat together until fluffy
  • 1 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla

Combine:
  • 2 cups grated carrots
  • 2 cups chopped walnuts
  • 1 cups raisins

Add carrots, nuts and rasins, then on low speed add flour mixture until just combined. Using small silver scoop, scoop onto sheet pans, top half of the cookies with a whole walnut.


Bake for 14-18 minutes at 375 degrees. Freeze until ready to be filled with cream cheeze icing. Makes 18 cookies.



Cream Cheese Filling
  • 10 tbs icing sugar
  • 4 tbs butter, softened
  • 1 1/2 cups cream cheese
  • 4 tbsp whipping cream (35% fat)

Cream the icing sugar and butter in the bowl of an electric mixer until pale and smooth. Add the cream cheese in tiny amounts, allowing it to completely incorporated before adding the rest. Scrape down the sides of the mixing bowl during to ensure even mixing.


Turn the mixer to the lowest speed and add the cream and mix just until smooth, being careful not to over mix, the frosting should be a spreadable consistency but not runny.
